Grilled Watermelon with Goat Cheese

Grilled Watermelon with Goat Cheese

There are so many foods that say summer to me — hot dogs & hamburgers, ice cream, corn on the cob and watermelon! But only one of those actually smells like summer! I love the fresh smell of watermelon and when you add my favorite cheese to it, you have Grilled Watermelon with Goat Cheese!

Ahh — does it get any better than that!

I’ve actually never grilled watermelon until now. I found it takes longer than I thought it would take and it’s extremely wet and watery (I did expect that). But I will say, there is no denying the flavor of the fresh watermelon with goat cheese and a little basil!

After I cut the watermelon into triangles, I put it on an already hot grill. If you want the grill marks, and who doesn’t :), you can leave it on each side for several minutes.

The grill marks give the watermelon another “summer” element. It’s also very flavorful!

I sprinkled some fresh basil from our garden on top.

I then added the goat cheese. It’s alright to be generous with the cheese.  If you don’t like goat cheese or want to try something different, you can use feta cheese, gorgonzola cheese or even blue cheese.  I like the white soft cheese better than parmesan or a cheddar mix.

This makes a wonderful appetizer or even dessert. I always love when I am served cheese for dessert. Cheese is a luxury and is wonderful after a meal.

Ok this NEVER happens but I have all the ingredients for this!! I’ve never grilled watermelon before – I am so excited! I actually have two massive melons right now since my hubby, son, and I go through a whole watermelon in like the span of 2 days lately!

I LOVE this idea. I’m a newbie to the whole salt on watermelon thing so I’m sure I would love it grilled with basil! Sounds amazing!

Maybe just try one piece and see what you think! If you don’t want to grill it, you can cut it up with the basil and goat cheese. It makes a good cold salad too!

I have never tried grilled watermelon and I don’t think it’s something I would have ever even thought to try, but this looks absolutely delicious! Adding this to my summer bucket list.

I love the combination of watermelon with feta cheese, so this recipe really caught my eye. We always have way too much watermelon when we buy one. I’m definitely going to try grilling some to serve for dessert with a BBQ!

I have grilled pineapple but never watermelon. Your recipe looks so delicious and the goat cheese must give it tangy bite. Looking forward to trying this one:)
