I’m obsessed with two things right now….avocado toast and goat cheese! So I decided to put them together in this Avocado Toast with Goat Cheese recipe!
I love experimenting with avocado toast. It’s one of those recipes that has a solid foundation so just about anything works with it. I think before I really appreciated avocados, I couldn’t understand the fascination. But now that I found my newest food love, I can’t imagine what I did without it:)
Another food under-appreciated in my kitchen was red pepper flakes. Growing up in an Irish home, we didn’t add a lot of heat to our meals. In fact, I think black pepper was the most daring we ever got.
The added kick from the red pepper flakes is very noticeable and worth the risk!
If you make a lot of avocado toast, you’ve noticed there isn’t a lot of cooking. However, your layering skills will come in handy.
Once I smashed the avocados, I started my layering on the toast. The avocados go first, then I added the goat cheese and a sprinkle of kosher salt and red pepper flakes.
Drizzle a little olive oil on top and you have your gourmet breakfast!
This avocado toast will change the way you feel about a quick breakfast. This is definitely worth the time!
Here are a few of my other favorite avocado toast recipes:
